"Yanwari" is a colloquial Japanese expression meaning "soft" or "gentle", and so this sake is. Yet it reveals a surprisingly insistent umami and a satisfying depth of acidity. From this very easy-drinking sake, we conjure a profundity of flavour to hold the attention even at these very low levels of alcohol (less than thirteen percent).
We recommend drinking warm for maximum coddling effect, as in the example of the very cosy monkey on the label.
