One of two sister products brewed with organic rice grown specifically to extend the habitat of the huge, carnivorous Oriental White Stork - in Toyooka City, just a few miles from our brewery. This interpretation is a dry kimoto, ideal for drinking hot with food. This style of brewing and the resulting sake are precisely that which was standard in the Japan of the 19th Century.
