Tamagawa Reserved

The “Red Label” yamahai was the firstborn of Tamagawa’s series of Spontaneous Fermentation products. The bold-flavoured 3U (undiluted, unfiltered and unpasteurized) version is a cult classic. This “Reserved” limited edition sees the original genshu pasteurized and matured at room temperature for three years and up. (Room temperature in our brewery means 2-3C in winter, and over 30C in midsummer.)

Time Machine Reserved

Sweet but strangely more-ish, Time Machine is made with methods recorded in 1712. Normal sake is almost colourless when pressed, but Time Machine immediately has a rich amber colour which would take five-to-ten years for normal sake to reach. From this extreme starting point, the “Reserved” version is matured for several years at room temperature.
